I'm your host, Lee Safar, and this is unfortunately the final episode in what has been a really wonderful and interesting conversation with Ian Fretheim, the director of sensory analysis from Cafe Imports that is based in the United States.

Like, what is quality coffee anymore, given, like, what we were talking about in the last episode as we introduced things like, um, you know, all these post-harvest processing methods that people are starting to use, versus, like, when we came into the industry when people were talking about naturals and washed, and then a little bit later people started talking about honeys, and then we started talking about different varieties and things like that.

We, we seem to be chasing hype, uh, to keep up with the attention economy, as we've spoken about in this series.

And in this episode, we are talking about what the biggest impacts are that are influencing how we assess what quality is and what quality isn't.

Now, it would not be a podcast series with Ian and Lee if we didn't talk about objectivity and subjectivity.

Right? Methodology of the assessment and, um, definition of quality impacts the assessment.
