So tell us about this and why you decided, given your background, to focus on this part of the industry.

I've been consulting since about 2011 and I had a different, we had a different brand.

It was called Pastry Virtuosity, right? And I thought it was really creative and a cool name.

It sort of has a nod to, you know, like Virtuosity, like that Philip K. Dick novel, a little bit of, science fiction and also, you know, virtuosity is something that I think is worthy of to aspire to as a pastry chef, you know, it's like a high art, in my opinion.

However, it also felt like we were working on R&D and recipes and we would be brought in to work with an owner.

And I think their thinking was if we could just get like a gelato program going or fine tune these recipes that this is going to solve the problem.

But I realized maybe five, six years ago that no matter what we did on the programming side, the recipe side, the training side, if the business was poorly structured with systems or even leveraged financially, none of that would really matter and the business would still struggle.

And I realized, again, my artistry and someone else's artistry, it's really different.

I have more success with sitting with the business owner and fixing the system so that they can do whatever style they want to do later on.

And my gut was that all bakeries, pastry chefs, bakers, bakery owners go through the same kind of experience.
