You know, I felt, I think just writing the cookbook, I felt like I wanted, because of my own experiences with food, transforming my own internal state.

It makes so much sense that what we eat affects the way we think and all of the different things that we experience.

And I felt like I wanted to understand my own experience better and also just be able to speak to more of the nutritional piece of plant-based cooking if people were to ask.

And, you know, I just, I'm always someone who's curious and I want to know more.

And so there's just sort of this sensational curiosity about plants the way that my mind thinks.

And yeah, and so it was Dr. Campbell was the one, he wrote the China study, and he was the professor that taught that course and led it.

There were several findings out of it, but they were mapping the incidence of different diseases and diet and lifestyle choices and finding these patterns between... more like the Western diet leading, which there's, you know, many things to it.

It's the dairy and the, you know, seed oils and all of these things leading to higher incidences of different diseases versus these other areas where there was a less westernized diet and much more like plant-based food and whole foods leading to a lower incidence of various diseases.

That aligns perfectly with lifestyle medicine, which is a new branch of the allopathic medical model focusing on disease prevention, treatment, and reversal solely with lifestyle factors.
