I kind of, I did do stages in other kitchens and I relied a lot on what I knew from school and what I was working with in the rented commercial kitchen that I had and what I could afford.

And what fit in my physical space? And I just knew that I could start with kind of the bare minimum, design a menu around that, and we could add as we needed to and as we could afford to.
