So now working in the restaurant business, you start to fall in love with the art of it.

Yes.

But

then also the science background kind of helps to understand fermentation, harvest.

All that kind of beautiful stuff that happens in a plant's life, right? Yeah.

And we took a tour of like the Fort Habe distillery in Brooklyn.

Um, the whole staff did.

And I was like, this is a chem lab.

I'm like, I feel like at

home here.

Um, and those guys are great and talking with them.

And so I was kind of like spirit distillery, maybe, um, one of my friends, she was, had just started, um, she was leaving El Buco elementary.

And so I was talking with her about wine.

Oh, who's that? Um, Caitlin, um, I'm blanking on her last name right now.

Um,

Good restaurant, though.

Great

restaurant.

And now she's on the team at Coat, and she has done wine dinners with them.

And she's like a rocks nerd.

So I was talking with her one night.

We were nerding out over drinks after we'd all gotten off of work.

And she was talking about geology, and I was talking about chemistry.

And I was like, wait, I think wine could also be something that would be really cool for me.

So it was supposed to be just my gap year plan.
