So I'm curious, with that first location, were you designing systems in mind like to expand, like, you know, kind of curious about like hiring and training, right? When it was just you at that first location with that opening team, you know, were you designing something that you knew was going to scale or were you just kind of trying to get that first restaurant going first and figure it out?
I think, you know, when you're in that mode, you're you're kind of winging it, you know, from like the get go.
So we were trying to save aggressively to like use that cash to open up the next door.
Like I'm trying to open up like for the least amount of money as possible to get into a space.
But as we had the two, one day I'm portioning sauces and it took me about two hours and I'm sitting over all these little two ounce cups and I'm portioning.
And I just realized at that point, I go, I got to put down, you know, I got to put down the rag.
I got to put down the sauce and I got to pay someone to do this so I can help like grow the business.
So that was a really hard like moment when I realized like, hey, we got to like really focus on systems.
I need to get out of doing the work inside the restaurant so I can focus on the trainings, putting together like, you know, packages, the culture, putting together tests for our team, like really like honing in on like, hey, I need to set up a system where I can train everybody, hire good managers, and then have them, you know, have our team do the work.
And, you know, when you work seven days a week and I got little kids at home, you know, it gets challenging quick.

kind of sat down to start designing some of those systems? What was that process like for
you? Well, you got to get your foundation of like, you know, what are your core values? What are like the main things in the company? I was so proud because, you know, someone had said something.
