What they lack is alignment between what they believe and what they actually do, and that gap isn't random.

It's shaped by habits, identities, social pressure, convenience, and the barely conscious calculations people make to keep their lives running smoothly.

It seems like people could have a belief that they shouldn't eat animals, but any foothold that they can find that can provide them a reason to not follow that belief, they will tend to rely on that.

And so if meat is cheaper, or if other people around them are eating meat, or if they feel like by eating plant-based products that that'll be ineffectual on the huge system and the markets and everything else, all of those reasons are things that people will use to justify behaving in ways that might be inconsistent with their beliefs.
