So how did you come to have such a focus on food waste?

Well, well, um, I think it was kind of a natural progress in my career and the way that I worked.

And I didn't realize this until maybe recently or a few years ago, that when I look back to my, or to the way that I was brought up, what my childhood was like, where I was growing up.

You know, I come from a very small village in Slovakia, kind of a, let's call it self-sufficient family.

You know, like garden, a few animals.

So naturally, everything that was on a plate had to be eaten.

There was no such a thing as food waste back then.
