Ask Yotam Ottolenghi

He kept those secret much like Coca-Cola, right? So the bartenders didn't actually know everything that went into the cocktails?

He hired bartenders, and he entrusted them to make his drinks, but he soon discovered that s- you know, they would take his recipes and go somewhere else and kind of rip him off and that his customers, some of them were trying to figure out what he was doing, like this guy Victor Bergeron, who later became Trader Vic, was always in there trying to figure out what he was doing.

So he created some really elaborate systems for both expediting the cocktails but also keeping secrets.

So he had a production line where this particular bartender knew how to m- mix the juices and pass it to the next guy who would just mix the rums and pass it to the next guy who'd work on the garnishes.

And he kept people in the dark about the full recipes, and then he had these secret ingredients, number two, number four, number seven, number eight, and nobody knew what those were.

They were just big, you know, gallon jugs that would show up, and that was one of the crucial ingredients.

So he has this formula for bringing together different cultural symbols, and then he reduces them to their more, I guess, romantic elements, and then he packages this all up for tourists, and of course, again, it's wildly successful.
