So tell us about the wine.

This is our Trombetta Family Wines 2021 Chardonnay from the Petaluma Gap, Gap's Crown Vineyard.

And my daughter, Erica Stancliffe, is the winemaker.

She has an amazing palate.

She really understands about balancing the richness of the fruit with good acidity, not too much oak.

We use probably about 33% new French oak.

But she also uses Surly's Batonnage, which is a fancy way of saying that the dead yeast cells that... are in the bottom of the belly of the barrel, she mixes those up about every 8 to 10 days.
