So they still have a pretty – significant indigenous population there.

And so they were kind of cooking fish and things in heavy citrus, so the base of ceviche, right, for a very long time.

But then there's also a Japanese influence in Peru, which is fascinating.

And so, you know, in Japan, there's a lot of raw fish.
