Yeah, it was really fun.

I mean, at the time, it was me, my colleague Tessa, who still works with me now, and a good friend of mine, Joe, and we were both at Leith's School of Food and Wine together.

We sat down and we started just trying lots of different products.

And I think knowing that we were going into a street food environment, You need a product that's service friendly, that you can serve fast, but consistently with good quality.

And so like a slow cooked meat is really good for that.
