Now, Nick, is there a moment when you knew that like Hannah had what it takes?

I think, you know, I had known Hannah from other restaurants before that, right? And so when I realized that I really wanted to work with Hannah, it was less about like, oh, like she's a great line cook or what it takes.

But I think what you said earlier, it was like people who like to eat, people who enjoy food.

And Hannah and I, if there's anything that we have in common, it's our love for food, our love for dining.

Something that we talk about all the time is like, Where have you eaten lately? Like, what are your, you know, where'd you go in Chicago that you liked? Like, cause next time she goes, she's going to go check out the ones that we like.

We're both pretty critical of restaurants.

I think sometimes, you know, not in a way where like, we're trying to bring people down, but like, this was really great.
