What's the process?

So we start that process basically the second week of every month, um, looking forward to the end of the month.

Um, and Mikey and I will sit down, we'll look at what's selling, what's not, what do we wanna bring on for the next season, what needs, like, what are we...

You know, supplies are running out of whatever, all of those things.

And I kind of drive the conversation.

Mikey and I work on, like, is, what's the best way to, to put this together, create this sauce, whatever it needs to be.

And then we go through the tasting process with our managers, Henry and Kane.

Y- you wanna do things creatively, but you also don't wanna get dubbed as just like this is the place that has weird pizza.

Can you tell us about that space and how you found it?

Yeah.

So, um, the building that we are in is called the, the rain Burton building.

And usually it's just referred to as the Burton building.

Um, it is this.

1800 ish built building, um, near the corner of this downtown park in our little town of Dayton, Kentucky, which is about a mile and a half or a mile from downtown Cincinnati, Ohio, and just a short walk to the Ohio river.

Um, it's been a million different things.
