I wanna know chemically and structurally, what are the main changes happening to the wine?

The way I like to explain it is that there's all these different elements that make up a wine, and, you know, the best wines are the sum of those things but also a lot more on top.

But to understand it s- scientifically, let's just look at the individual elements of wine, and, uh, for argument's sake, let's say that's, um, color, aroma, alcohol, acid, tannin, and then, you know, you've got of course sweetness and bubbles and things with, um, those particular categories.

So there's obviously big trends that you can say where a bottle is moving in this direction, but those individual, uh, components are on their own kind of pathway.
