Joseph ValentinoGUEST
I think learning, I think being able to doing my having my mise en place ready as before I didn't.

Joseph ValentinoGUEST
So having my full mise en place ready before dinner service makes me feel very comfortable going into service.

Joseph ValentinoGUEST
Instead, as before, I didn't really have all my mise ready and it would backfire on me.

Joseph ValentinoGUEST
So now I understand having my mise before dinner service ready helps me go through dinner service a lot easier and a lot smoother.

Dave FinchHOST
I wondered, so first my question was, do you think that's ridiculous, that show? But then also, when you describe the ticket, can you describe what that is? That to me seems very stressful.

Joseph ValentinoGUEST
So a ticket comes through a machine and it has the first course, the second course, and your third course.
