And so what was like your idea of like to create something that would be signature for Sawstone Brewery?

So that's with that wild fermentation.

We do a lot of controlled fermentations, mostly controlled fermentations, but there's a wild side to brewing where you can capture yeast and inoculate barrels.

We often use whiskey barrels or whatever, wine barrels, whatever we can get our hands on.

And so that was a dream of mine getting started is to kind of have a barrel program.

It's super small.

It's still kind of going.

So why did you bet on those prohibition-style heritage beers rather than just chasing what's trendy here?
