Well, in Alberta, as all of us Albertans know, we have this crazy climate with Chinooks that are coming in.

They're changing the pressure dramatically and also changing the temperature dramatically in a very dry climate.

So those sort of three things come together.

And when you put whiskey in a barrel, so the changes in pressure will force the whiskey into the stage of the barrel to extract more flavor.

The fluctuation of temperature, when it's hot, it sucks out more flavor out of the wood.

When it's cool, it oxygenates.
