And what does bee-friendly mean?

So bee-friendly is essentially, the way I guess I'll sort of rewind and start from the beginning.

So, you know, when I started out my journey with food, it was all about a sustainable way of eating.

So that was through, you know, nose to tail feeding.

street food that I was doing at the time and route to shoot so using whole animal using wasted vegetables and trying to use everything so a less wasteful way of way of eating and that's sort of spread through everything I've done so that you know the like say the food truck and then we went on to do a chef collective where we used to go and take over restaurants across sort of London and beyond sort of cooking nose to tail but what's been important for me is that every everything I do everything I put out is as sustainable and as ethical as it as it can be now when it was really small scale and we were sort of using small independent beekeepers in London they were doing things right and they would because it was on a on a small scale when we started looking to scale up What became apparent is a lot of producers of honey, they don't do things particularly well or ethically.

So, you know, they do things like wing clipping.

So they'll clip the queen bee's wings off so she can't leave the hive and the hive can't swarm.
