Just adding in, like I said, when I say less than a milliliter into five ounces, Boom, I got the experience that I was pretty much looking for, you know? So how did you come across, like, without giving away, like, the actual, like, technique? It's like, when you were trying to figure out these flavors for yourself, like, what made you want to go down this avenue? I guess is the best way to ask the question.
11:37
Well, I was, this happened several years ago, and I was in, just a thought came into my mind.
11:44
Okay.
11:45
I was outside of Madrid in Spain, and this guy was trying to have me import French oak staves back to the United States.
11:57
And I think I was on the plane, and I read this article about extraction.
11:59
I thought, hmm, I wonder if that's ever been done, and why hasn't the industry accepted it? And so I came back, and I researched on how to extract, and I extracted— you know, just using the, the kind of some of the standard, uh, methods.
12:18
And it turned out to be unbelievably horrible.

13 MINS LATER

25:43
Oh,
1:37
So, um, kind of start from the beginning, Cal, uh, how did, how did you and Sawyer Beloke become, uh, a part of a team or how, you know, how did it begin?
1:48
Well, um, first, uh, thank you guys for inviting me tonight.
1:51
It's, it's a real pleasure and, uh, it's great to be part of your community.
1:55
It's a really cool.
1:56
It's been, uh, kind of unexpected little market segment, but I really like it.
2:03
Uh, like you guys are straight shooters and, uh, uh, have a lot of passion about your product.
2:10
So it's cool.

15 MINS LATER

17:23
Ignore me and you do your
22:13
How does a guy who trades lumber end up thinking, I should put oak in this bottle?
22:20
Great question.
22:20
Yeah, that is my background.
22:23
Trading oak around the world 30 plus years, a long time.
22:27
And so I buy and sell oak all over the world and kind of learn to understand the nuances between, you know, French or Northern European or American and the various regions.
22:44
And so I have been in, you know, I don't know if it's hundreds, but so many sawmills that produce white oak.
22:52
And I developed a real expertise in that.
27:45
aiming for a more rounded thing that also brings out other characters of charred oak and aged oak and and such
