And by 2014, Time magazine put a giant curl of butter on its cover with two very large words, eat butter.

And culturally, the case seemed like it was closed.

Butter had not simply been welcomed back into the kitchen, it had been exonerated, vindicated, almost martyred as it became proof that nutrition authorities everywhere had lied to us.

And this is where I think the story gets really interesting.

Because there was such a legitimate and much needed course correction happening here.

Especially because we've accumulated way more research since then.

So one 2015 meta-analysis of observational studies found no clear association between saturated fat intake and all-cause mortality, cardiovascular disease, or coronary heart disease outcomes.

An earlier 2010 cohort meta-analysis reached a similar conclusion, and a 2016 review provocatively titled Butter Back found that eating an additional tablespoon of butter per day was essentially neutral for cardiovascular disease, with only a very weak association with total mortality.

And they go there, they can't find him.

So Butter's justification here, but I just did what he told me.

It's like, well, he did.
