Do you see parallels between art and winemaking, things like composition, timing or the way they both capture light and atmosphere?
0:37
Yeah, I do see a lot of parallels with art and winemaking.
0:41
Mostly it's about making the essence of something, capturing the essence of something, and how that can be a fleeting moment.
0:51
Like making a photograph, for example, it's capturing a fleeting moment.
0:57
Winemaking can be, in a sense, the same.
1:01
You're capturing a moment in time from a site and putting that into the bottle and that will never be the same again.
1:12
So I see comparisons in that sort of respect.
4:30
Is that right?
19:07
How do you
19:08
build that liveliness in the glass? I like to think that that comes from a range of different places.
19:14
Part of it comes from techniques in the cellar.
19:16
I think the majority comes from sight.
19:19
Choosing to get fruit from Mount Gambier where you've got a coastal southern ocean influence, amazing retention of acid that's always going to give you that brightness and the acidity which Riesling holds really well.
19:33
In the cellar, I allow my juice to oxidize in the press tray and at that point before fermentation.
19:40
And I think what that does is that it allows the layers and more complexity in the wine later on.
23:28
What's the story behind that wine?
