Another stupid thing was some old guy told me was to just never mow your pasture because it would reseed itself.

Only the weeds do that.
Keep it mowed to keep the weeds down and strengthen the roots for grazing.
That gets the grass dense because energy is going into the roots, not into the seeds.
That's an interesting one.
