Today we're talking to Chef Jay, aka Boston Jay, aka Detroit Jay. We discuss the differences between East Coast, Midwest, and West Coast food and service. We let him take the host side of the couch…
kind of regional
okay
I mean, it really is.
Oh, right.
I mean, there's a lot of, you know, order at the counter.
Maybe, you know, they bring your food out, you bust your own table.
Even in places that are a little higher end, the service is still incredibly lacking.
Yeah.
And I would say across the board that service is lacking.
um but i i mean it's it's the same old same old you know there's just a lot of arrogance yeah you know there's a lot of owners that think they know what their customers want what their base is and they're always just missing you know from simple stuff like lighting to music uh that people are too confident in what they think that they know.
No, it's all over.
Do you think
it's all over? Because I feel like specifically I run into a lot of people with the unfounded arrogance.
Like they have all of this fucking confidence in what they're doing, but nothing to back it up or there's no reason behind it.
It's just blind fucking arrogance and confidence.
And I'm just like...
But maybe that's just me.
Maybe I'm just an asshole, and I'm seeing what I want to see, or...
I don't know, but...
So you think it's an across-the-board thing?
Yeah, I mean...
Oh, I...
It takes a lot to admit what you don't understand.
