So we have this thing called in the mix where we we kind of hit three different topics of what's kind of going on in our baking world right now.
We've got what are we baking? What are we chasing? As in what is our goal for whatever it is that we're baking and what kinds of things have been helping us to achieve those things? So, Mindy, take
us away.
Okay, well, I'm so excited to share that I took your advice from last week and I took a loaf and I stretched it over three days.
So I mixed it after work one day and let it, you know, did my coil folds and let it get into bulk fermentation for about two to three hours.
And then I wanted to go to bed.
So I put it in the fridge.
The next day I took it out and let it come to room temp.
for about an hour, did one coil fold and let it bulk a little bit longer, put it back in the fridge.
And then on the third day, I took it out and just scored it and baked it.
And I'm here to tell you it is possible to bake a beautiful loaf of bread during the week, You don't need like eight hours for bulk.
And I haven't even shared this with you yet.
I'm going to, I mean, I can send it to you, but I can also just kind of try to show you on here.
Yeah,
let me see.
Whoa! I mean...
Oh, look at
that.
Look at that.
This is a beautiful, you know, beautiful loaf.
My goodness.
And then, now, the crumb wasn't open crumb huge, but it's beautiful bread.
But it's beautiful.
And it was moist and delicious.
Your shaping is always so good.
