Sometimes the best interviews aren't scheduled weeks in advance.

Sometimes they can happen because two people meet at just the right moment.

I was walking through a Rondo Festival in St. Paul when someone called my name.

I stopped because I was just saundering anyway, looking in and smelling all the great food.

It was Chef Terrence Murdoch, owner of A Touch of Memphis Barbecue.

We'd never met before.

But he knew who I was.

I introduced myself to him and he goes, well, I recognize your voice.

I know who you are.

And we were talking barbecue before you could know it and family and eating.

And I walked away thinking I got to have this conversation on the barbecue radio network.

And today we're doing exactly that.

Chef Terrence grew up in North Memphis, Tennessee, I believe.

I hope I've got that right.

If not, he'll correct me.

Where barbecue is more than food.

It's a family.

It's a tradition thing.

It's pride.

Today, he's bringing those same flavors to Minnesota, of all places, with signature dry rubs, balanced sweet and heat sauces.

I asked him what's the difference between spicy and hot, and he laughed at me.
