Winesap

Rising demand for varieties most shoppers had never heard of a decade ago.

Arkansas Black, Roxbury Russet, Winesap.

Apples that carry a story instead of just a shelf life, finding buyers precisely because they're not the apple everybody already knows.

None of this fixes the deeper problems still facing small orchards.

Some varieties are better suited for pies than others.

Winesap and Cortland are a few we recommend.

Bougie and Granny Smith bake well, too.

Instead of a single variety, try using a mix of tart and sweet apples.
