To bear out these points, let's talk about an Edo and Meiji era Yakuza folk hero, known as Shimizu Jirocho.

Shimizu Jirocho was born in 1820, the last decades of the Edo period, in present-day Shizuoka City.

His father was a ferry captain along the Tomoe River and could not support him financially, so he was adopted by his uncle, Yamamoto Jirohachi, a rice wholesaler.

Jirocho was famously a rowdy kid.

So apart from the umami and the brothy-like taste that you experienced previously in Kyoto, this tea will also have fruity notes, kind of melon-like notes.

This is from a specific place in the northern part of Shizuoka Prefecture called Tamakawa.

And the type of tea plant used for making this tea is called Yamakai.

And it has, as I mentioned, fruity notes.
