So Rupert Ponsonby was the original OG of innovating beer lists in the UK.

He had all sorts of experience in wine.

And then at a certain point in his career, the British Hop Association asked him to build beer.

And he had a lot of success with the top restaurants in the UK.

Also, Rupert was involved in the beer and music pairing, how that affects our sensory perception of beer, and then also beer's relationship to pain and pleasure and sort of experimenting with the principles of the Marquis de Sade.
