Rungis

That was moved out of town.

Similar situation to Paris where Les Halles was moved out to Rungis in the 80s or 70s.

Here it was much later.

And so all this freed up a lot of space for new development.

And, um, yes, we start 24 Rue Saint-Placide, so seven years ago, and we start, we were three people, so only Olivia, my chef, and I.

And in fact, the two first year of Fruitini, in fact, I were, um, during the night at the market, at Rungis.

We bought the fruit to bring them in, everything in our lab at the end of the shop.

And Olivia, the chef, and I, we learn how to cut, to, to, to clean the fruits, to take out the pulp, to make a sorbet.

There was no, no, uh, Google or anything, you know? So it was really hard.

I just called friends and said, "Hey, we wanna start importing." And I kept hearing about this Rungis market, which was in Paris.

So I flew to Paris and, uh, went to the Rungis market in the middle of the night, and it was like I had, like I had found the mecca of food.

I mean, it's the oldest wholesale market in the world.

It's 600 acres, 6,000 employees, and it's the hub in Europe where everything goes to be sent to other countries.
