all this week on in the midwest garden i'm talking about fall wild foraging today wild root crops one of the easiest to harvest and most abundant is common burdock the edible part of the plant is not the leaves as many assume since it resembles rhubarb instead it's the large tap root that is the delicacy The starchy, potato-like root is wonderful when prepared in a number of different ways.

Burdock is sometimes difficult to dig, however.

It's best to wait for a cool, rainy day when the soil is soft and easier to work.
