I ended up getting some fails because I was using Robocopy.

And I would get this random thing where it would go like this, and it would pause at 95% and then fail, 92%.

And what was happening was it was copying a 4MB file, and then it would skip on this here because the file system I'm copying to is like EXT4 or ButterFS, and it doesn't support alternative data streams.
