Ricotta

so in the beginning we were drinking a hell of a lot of milk basically for the rest of the week or you know like i was giving it to friends and family like yeah quick have this you've only got a couple of days sort of thing um but as i've realized how much milk i need i have stopped to that and then it's funny because now i'm having to like readjust those numbers to stop more um so yeah that's working really well um and yeah as i start to get more and more wholesalers i guess that every week we'll have to move up accordingly.

So yeah, we don't have a hell of a lot of waste products, but with whatever waste products we are having at the moment, I am trialing Feta and I'm trialing Ricotta and I'm trialing all those sorts of things to get to a point where we can, yeah, have a couple of different lines like, I've always wanted the butter and the cheese.

Yep.

But mainly more fresh cheeses rather than aged cheeses.

Cheshire.

Ricotta.

Camembert.

Halloumi.

So at least if your baby is looking for a snack, you're giving them something really super nutritious.

And I like that you're offering some ideas about dairy-free sauces because a lot of our parents, like, I always, for pancakes, I kind of default to ricotta cheese because ricotta is low in sodium.

Ricotta is nice way to make pancakes softer.

But for families that don't eat dairy, either because they're vegan or the baby's allergic to dairy foods, they do need some options that are dairy-free.

Absolutely And like I'm, I make pancakes, I make a version of pancakes, like vegan pancake, and I'll put flax seed in instead of egg, and then just use like a coconut milk.

But I can see it being used on a pizza with a purpose, like the ricotta is being used in that case.

It's pretty mild, though.

Ricotta's pretty mild compared to these.

It is, but there's

no reason that if you're designing a pizza that you would go with a full-strength blue cheese dressing.
