So the reason we use rye over bourbon, so...

It's still Quercus alba.

It's still bringing those vanilla and butterscotch notes that you associate with ex-bourbon casks.

But rye whiskey has this real black pepper note to it, a really spicy note to it.

So for me, that was an extra layer of complexity and depth.

So that's why we use rye casks.

So that means that not only are we getting vanilla and butterscotch notes, from the Quercus alba, we're getting this black pepper spice.

And it's interesting, you know, in some of our seven-year-old releases that we've released at the minute, that black pepper's kind of moved more into a white pepper.

There is an old tale goes that Herne the Hunter, sometime a keeper here in Windsor Forest, doth all the wintertime, at still midnight, walk round about an oak with great ragged horns, and there he blasts the tree and takes the cattle and makes milch-kine yield blood and shakes a chain in a most hideous and dreadful manner.

You have heard of such a spirit, and well you know, the superstitious idol-headed eld received and did deliver to our age this tale of Herne the Hunter for a truth

Why, yet there want not many that do fear in deep of night to walk by this Herne's Oak.

You know, I, I know Oaks have been struggling with a few different issues.

I still love, you know, the Burr Oaks.

Swamp White Oak has been kind of the popular one the last, you know, five to 10 years that a lot of cities are planting and stuff like that.

And then another one it's gotten pretty popular.

Kevin is his name.

He came out to Pernod Oak Tree and he cut through a beehive.

and the bees swarmed him, and he jumped out of the tree.

He ran to his truck.

There's some actually, some decent box wines out there, as you well know.

Black Box has made varietal Paso Cabs for many, many years.

So, and you go to Seal Oak, and you've got, and I believe they're starting to use chinkapin now in America.

So there's, normally there was three genomes, normally, but people are experimenting.

But a lot of the French had to go to Hungary a few years back because of the trees for France and Spain, and they're under government control, so they're only allowed a certain amount every year.

yeah yeah yeah it's As we know how Scotland loses 2% a year in strength and in volume and all that kind of stuff I know Scotland is at the forefront when it comes to Scotch and they don't like to stray from the formula but I think it would probably benefit a lot of distilleries if they started to go back to or have a range of smaller casks more distilleries did that they tend to want to stick to ASBs and above But there is Arnold Speyside and Oakwood Cooperage.

I think we're making a lot of octaves for a while there.
