But the way it's been working in iPad iOS 27, and I checked this after every single beta, is if you just tap on a different app when there's multitasking going on, that will break presenter mode.

So if you're presenting via Keynote and it's taking over the whole screen, then you tap the Notes app on a different window on the screen, suddenly the audience sees your entire iPad desktop with all your windows and stuff like that.
