ABBA.

And it's a tricky one.

It's not one that I inherited from my parents.

I actually inherited it from my very subversive, wild auntie.

I was born in 1971 in the UK and my parents obviously were Indian.

And so the only music that I would ever hear would be, you know, the high shrill notes of Indian music, this happy kind of Bollywood-esque music in an entirely different tonic scale.

And I never really loved it very much.

I must have kept on dragging through the business of the day.

And we forget that.

You're so right, and isn't that such a shame that they appropriated the Union Jack, that they appropriated a f- you know, 'cause what I love about this nation, I look at, o- okay, just going to my second job, which is, you know, building Mowgli, a chain of Indian restaurants I couldn't have done that in India, I couldn't have done it in France, I couldn't have done it in Spain, I couldn't have done it in America.

This nation, in terms of food, is the most open-minded nation that there is, for whatever reason, and it's that flag that enabled me to do that.

But you're so right.

Do you know there used to be an NF sign on the back of a signpost in a town called Berskhaw, which is near me, and forever now when I drive past that road, I feel fear and I feel this tiny...

You feel absolutely tiny.

You know, so you can only ever get that cocky, I think, when you're [laughs] when you're foreign.

Oh.

So why give that up?

I did, and I absolutely loved every minute of that job.

I feel I haven't worked a day in my life.

I have to say, you know, if you've got jobs that you enjoy, you are really blessed.

What I realised is having been born in the UK, once the first generation Indians that came over, once they...

They take with them a lot of these recipes, a lot of these tried and tested spice formulas.

So while I was a barrister, I became very evangelical about capturing those recipes and teaching them to the Brits around me.

Nisha, what advice would you give someone thinking of just starting afresh in food?
