Nick Hillman

Well, that's good news.

I mean, next time we talk to Nick Hillman, we have to get some advice from him on how I can grow a nice, hefty harvest of potatoes.

But what if we cook them as French

fries? Well, even there, we need to distinguish between the potato itself and what we've done to the potato.

And while that was once my position, that is not my position anymore.

So I've got a lot of concerns, however, about modern wheat production, agricultural chemicals, industrial fortification, and certain aspects of modern wheat breeding and the ways we've largely abandoned traditional preparation methods.

We've talked about that a bunch with our friend Nick Hillman.

But I think we need to be careful about treating all those things as though they are the same problem.
