ReneeHOST
37:54
how do you do that pairing? Like, this is, you know, like.
Tom FuchsGUEST
37:56
So, but I get with my friends and they said, oh, Tom, you know, I find the Norton to be more like a, a Nebbiola or a Muvedra.
Tom FuchsGUEST
38:03
And I said, well, look, I'm not going to teach them what a Nebbiola or a Muvedra is.
Tom FuchsGUEST
38:06
Oh, yeah, I'll take one as well.
Tom FuchsGUEST
38:08
Oh, did I get mine over there? Great.
Alli DelGrippoHOST

So at this point, there were only a few producers working with the wine bocca, which is a historic style of making wine in this area as well.
Alli DelGrippoHOST
58:36
It's a blend of Nebbiolo, which is the most prominent grape grown in Italy.
Alli DelGrippoHOST
58:41
We know it for Barolo.
Alli DelGrippoHOST
58:42
We know it for Barbaresco and another local grape called Vespalina.
Alexandra WakimHOST
59:13
will honor it, you know?
Alli DelGrippoHOST
59:15
Exactly right.
Alli DelGrippoHOST
59:15
So a lot of winemakers in this region ended up moving further south and focused largely on Nebbiolo.
Alli DelGrippoHOST
59:21
So it became this kind of uncommon style of winemaking.

Marissa MuoioHOST
21:11
It's brilliant with food, right? We know that.
Marissa MuoioHOST
21:13
How do you and your team, you know, really build pairings that bridge those regional Southern dishes with classic Italian to ours, like Nebbiolo, for example, or any mineral driven, you know, northern Italian whites.
Matthew ConwayGUEST
21:27
I mean, this may not be what you want to hear on this pod, but I think that Nebbiolo has become softer and more approachable over the past decade than it ever has been.
Matthew ConwayGUEST
21:38
So what I often try to tell people outside of a food pairing is that even from some of the top, most expensive producers, a lot of Barolo has never been more approachable when it's younger.
Matthew ConwayGUEST
21:51
Doesn't mean that it won't age for a very long time.
DylanHOST
13:30
know and he'd rather avoid that so that's i think is the story there but going to the slopes then the great wine the great grape i think
OsianHOST
13:40
of pied monte is nebbiolo this is
DylanHOST
13:44
the king this is if you've heard of pied monte wines you've probably heard of Barolo and Barbaresco, and it's Nebbiolo.
DylanHOST
13:54
Vincenzo makes a very good Nebbiolo, but it doesn't hold that name, the Barolo, the King of Wines.
LlinosHOST
14:02
And they're very expensive, aren't they? People tend to have heard of those, but not the grape that makes it, I find.
LlinosHOST
14:06
Yeah,
DylanHOST
14:07
exactly.
DylanHOST
14:07
It's one of those ones where you haven't heard of Nebbiolo, but you know Barolo.
Paul ZitarelliGUEST
13:14
You know, I think a lot of us have become very comfortable with the notion of seasonal eating, especially with access to farmers markets and, you know, understanding what produce is best when.
Paul ZitarelliGUEST
13:24
But I found, I mean, I could see through full pull that basically our list members were already doing this because we would sell more like Nebbiolo during the season that we're about to enter because people think of it as like autumnal wine and it's going to go with like a good, you know, Chanterelles over polenta or something.
Paul ZitarelliGUEST
13:41
You start, you know, doing all that.
Paul ZitarelliGUEST
13:43
And so I wanted to try to like write that up in book form.
Aliye MeltonGUEST
37:29
Yeah.
Aliye MeltonGUEST
37:30
And by Barolo, I do mean Nebbiolo.
Aliye MeltonGUEST
37:33
But there's just something so... versatile about Nebbiolo that like yeah and it's a thinking wine and that you kind of have to sit with it and like smell it and sniff it and and taste it and like let it breathe in the glass and let it warm up a little bit but there's just something like magical about it that just sings to me every time I have a really good Nebbiolo it's just and probably quite frankly this purely from a like nerdy passion side some like a really great German Riesling um something with like searing acidity maybe a little sweet but like just bright and fresh and um a little kind of unexpected uh right and and I realize I've skewed very European and all of that but um There's so many.
Aliye MeltonGUEST
38:28
It's okay.
Aliye MeltonGUEST
38:29
This is such a hard question to answer because there's so much great wine out there.
Matt CauzHOST
10:52
It's very rooted in the past.
Matt CauzHOST
10:53
There's, you know, wars in Barolo about, about what size barrique you use to, you know, to age the Nebbiolo.
Matt CauzHOST
11:01
Is there a push and pull between being innovative, but also respecting the past?
Stefano BeniniGUEST
11:06
Yeah, I think a little bit the secret is to somehow look for innovation.
DaveHOST
19:29
I've never had it myself, Raymond.
DaveHOST
19:31
But like even Nebbiolo, they do Ettore Germano.
RayHOST
19:36
That's a fantastic wine.
RayHOST
19:37
He does the
DaveHOST

Rosana, the Altalanga, Metodo Classico, Nebbiolo.
DaveHOST
19:42
That is fantastic.
DaveHOST
19:43
So good.
Paul RobinsonGUEST
5:26
And this was a Sangiovese blind tasting smackdown, so to speak.
Paul RobinsonGUEST
5:34
So I used the boxing theme and it was a blind tasting of these two incredible grapes, two of Italy's most important grapes, Nebbiolo from the North, Sangiovese from the Central and South.
Paul RobinsonGUEST
5:45
And, uh, It was an oversold class, packed.
Paul RobinsonGUEST
5:49
I had an assistant.
