The Medjool, which is large and sweet, and the Deglet Noir, which is a bit firmer and often used in baking.

But the actual liquid gold, the pure, unadulterated date syrup, was virtually non-existent.

And the few versions you could find were hidden away in the dusty corners of obscure import stores.
