Yeah, I don't know if it's something that would happen.

A couple of weekends ago, I was down at Kreutz Market in Lockhart.

Roy Perez was retiring after a 39-year career as pitmaster at Kreutz Market.

He just made the Barbecue Hall of Fame last year and To consider just how worthy he is for the Barbecue Hall of Fame, I couldn't ever put myself in that similar position as to equal of Roy Perez or Tootsie Tominets.

Uh, also the fact that he's got such a distinctive look and, you know, you go back to that, uh, that newspaper article when a Christ market moved from its original location, uh, and moved to the new location.

And they actually brought wood coals from that old location to the new, to start the fires.

And it was Roy was one of the people who were dragging that bucket full of hot coals down the streets of Lockhart.

And that image was shared so many times.

Yeah, it does.

Feels like you're in Lockhart, Texas a little bit.

Yeah.

You know, like you come in and it's like rightfully so.

Like all the signs were made in Lockhart, Texas too, and, you know, Brady Clark, which designed some of the restaurant is also from Georgetown, Texas.

So you know, you get that feel, you know? Kinda like a real Texan kinda barbecue joint.

But then once you start seeing the food and how different it is and, like, just all the elements, you're like, "Oh, man.

Another characteristic of the chopping blocks at historic Central Texas barbecue joints is their round shape.

Consider the chopping block at Smitty's Market in Lockhart.

It is about four feet in diameter and made of slabs of wood assembled to present an edge grain cutting surface.

Metal hoops compress the wood around the perimeter.

Chopping blocks play a practical role in serving sliced and chopped meat to barbecue fans, but their deeper value is tradition.

New barbecue joints can't recreate the dips and sways worn into blocks by decades of use.

At places such as Smitty's and Lockhart, those blocks provide a direct connection to Texas barbecue past.
