Back in the day, like, when we started Snallygaster, people were really interested in, like, kind of ticking beers and tasting a lot of different beers.

They were really interested in trying super rare beers and a lot of stronger beers, a lot of hype beers, you know, when hazies came along and hazy dibbas and barely salads and, you know, maybe some Lambics, Long Gates, mixed culture beers, fruited sours, things like that.

And people liked lagers and classic styles, but that was kind of like the old days, like...

You know, for me, like in the 90s up until the early 2000s and even before that, it was a lot of classic styles.

We make – spontaneous beers, we make two types.

We make a blonde beer in the style of Lambic or Guzza, and then we also – make a sour brown beer in the style of a, you know, Flanders style brown ale.

And, uh, what I do when I taste these is I, I imagine, like you said, like I'm in Brussels or, you know, I'm somewhere, uh, in Flanders and I'm, I'm, uh, I, you know, I'm at a, at a Lambic brewery and I'm trying to, in my mind, does, does this taste like I'm standing, uh, in a, in a beer hall or, or in, in a cellar in a Lambic brewery? And if I taste a beer and I say, nope, that doesn't taste like Belgium, then that's probably not going to be part of the blend.

But every once in a while, I'll taste one and go, that's it.
