Hiyashi chūka

You can have it cold, you know, the somen, and you can dip it, or you can have a hot soba, too, with the tea that you pour over.

And then actually my favorite summer dish right now is it's called Hiyashi Chuka, which is a blend of Chinese and Japanese fusion together.

That's also very ancient.

I'm pretty sure the genesis is like from years and years ago, but it's like chilled soba or ramen noodles with like ham, cucumber, pickles.
