Haitian cuisine

I mean, y- your background is, uh, you're Peruvian and Colombian.

Greg's background is, is Haitian.

Mm-hmm.

And in this book, uh, among many other food cultures and styles, those three are apparent.

And a lot of flavor building bet- in all of those three cuisines.

Mm-hmm.

I find Peruvian and Haitian to be almost very similar.

Haitian food is quite complicated-

He always plays music there.

It's Haitian food cooked by Haitian women.

And it's like it's a bar atmosphere, but the food is amazing.

So it's just always a vibe.

They were cousins.

Like, Wynn and Regine of Arcade Fire would come to Robin Corner every time we were in Toronto.

Regine's Haitian parents.

And then they just approached us about doing something in Montreal.

She just is kind of doing stuff that I love to do, like really showing how like, yes, Jamaica influences like Southern food.

And yes, like Haiti, Haitian food, like also inspires and has been inspiring for years to Southern food.

It's awesome to see.

And awesome how they use different spices to bring out flavors in such traditional Southern dishes.
