And if you're in San Francisco, you know Gary Danko's.

You know how expensive Gary Danko's is.

It's friggin' expensive at Gary Danko.

Hundreds and hundreds and hundreds of dollars spent.

Oh my God.

I started in Boulder and, and Denver, and then, um, in my really-- I, I think I really-- My, my turning point when I got really serious about cooking was in my early 20s.

Um, I d- I moved to San Francisco, packed my, my trunk [laughs] you know, with just a, a couple, couple items of clothes, and drove to San Francisco and showed up on Gary Danko's doorstep and bothered him for a week until he gave me a, a job.

So, um, and that's how you got it done in those days, you know? It was like you, you know, you had paper resumes and, you know, it was, uh, you cold-called people, and you know, and, and-- or you, you know, went and physically dropped off a, a resume.

And, and so whenever people do that to me now [laughs] I, I love it.

... and you started at Gary Danko's as a line cook as well, right? So you kinda came-

From there, I think, you know, I w- I w- really wanted something that is a little bit more serious, a little bit more focused.

I ended up in Danco, uh, g- restaurant Gary Danko.

That time was '08, '09, I believe.

Gary Danko was the pastry chef.
