Eric van KulenGUEST
1:27
And we connect that person up with our own team.
Eric van KulenGUEST
1:29
R&D person and then there is a initial conversation and at that point typically we would identify their specific requirements whether that would be you know pricing texture or just general idea what they have and how they would want to apply it whether it's for you know in their F&B business or the retail business etc etc and then from there once we start the conversation.
Cheryl GohHOST
1:50
And just to clarify for our listeners who may not be too sure, Oishi specializes in ice cream or do you do things beyond that?
Eric van KulenGUEST
1:57
We are mostly ice cream, gelatos, soft serve, as well as premixes, powder premixes, bakery items.

Cheryl GohHOST
8:39
yeah well i mean it's a happy food that you're working with so yeah i mean yeah it is it's hard to go wrong with dessert right so yeah okay um i have have food trends become more unpredictable over the years or and has it has that kind of changed the way the both of you work at oishi
Eric van KulenGUEST
8:59
I mean, I'm not sure whether things become more unpredictable.
Eric van KulenGUEST
9:01
I would think in today's world with so much media, it actually becomes a lot easier to identify what is actually gaining momentum, right? The question then is, what do the F&B business actually pick up on this, right? But fundamentally though, because whatever concept you have as an F&B operator, it still needs to fit your overall proposition, right? And it's still very much that the product by itself needs to be liked by your customers, right? As opposed to just creating a hype, which will not be sustainable, you know? Yeah.
Eric van KulenGUEST
9:28
So I think on balance, there is a lot more visibility, I think, generally about what's happening in the F&B business.
Zina ZalameaHOST
0:58
So what does that actually mean? She'll tell us later on.
Zina ZalameaHOST
1:01
And we'll also look at how people of determination are being trained for meaningful careers in the F&B industry.
Zina ZalameaHOST
1:07
And we'll meet Emirati entrepreneur Saeed Al Ghaz to talk more.
Zina ZalameaHOST
1:11
homegrown hospitality and the UAE's evolving coffee scene.

Zina ZalameaHOST
37:20
Now, Helen talks a lot on the show about the people behind our food, the chefs, the baristas, the servers and the kitchen teams.
Zina ZalameaHOST
37:30
But are we overlooking a whole group of people who could be part of this industry? Joining me in the studio is Christina Kalakian, Managing Director of Daga's Management Consultancy.
Zina ZalameaHOST
37:41
She runs an inclusive employment program called that prepares people of determination for meaningful jobs in F&B.
Zina ZalameaHOST
37:50
Christina, welcome to the studio.
Ines LaoudGUEST
16:09
Think of it as, as a destination within Mall of the Emirates, where you'll have a collection of experiences unlike anything we have done before, and it's a crossover between, uh, multiple entertainment experiences, and we're bringing the best of the food and dining as well.
Ines LaoudGUEST
16:27
We will have four entertainment locations and close to 18 F&B locations.
Ines LaoudGUEST
16:31
Uh, it is what brings life to the malls.
Ines LaoudGUEST
16:33
We, we have seen the change in more experiential, uh, offerings in the malls.
Khalifa Bin BreikGUEST
19:35
So again, the Hangout, y- you know, an exciting project that anchors the west end is one of, you know, the destinations or the redevelopments that are currently taking shape in Mall of the Emirates, and hopefully soon, by end of the month or beginning of October, we'll start showcasing, you know, some of the openings within what we call the Hangout in the west end of Mall of the Emirates.
Tom UrquhartHOST
19:55
You look at this from a portfolio perspective and all of Majid Al Futtaim's assets a- around, you know, the country and further afield, and yet there seems to be a double down on, A, shopping malls and where, how important they are to the portfolio as a whole.
Tom UrquhartHOST
20:08
But within that, F&B as well, and in such a competitive food and beverage community.
Tom UrquhartHOST
20:14
Uh, talk to us if you can about the destinations strategy and investment therein.
Renata Messarra AbergelGUEST
41:16
Five locations.
Renata Messarra AbergelGUEST
41:17
And then under each department, they had the F&B department.
Renata Messarra AbergelGUEST
41:21
They have the lifestyle department.
Renata Messarra AbergelGUEST
41:22
They started growing a lot to I think now they have 120 or even, uh, bigger.

James Knight PachecoHOST
54:24
Yeah
Renata Messarra AbergelGUEST
54:25
...
Renata Messarra AbergelGUEST
54:25
most, uh, recognized, uh, F&B, uh, PR agency.
Renata Messarra AbergelGUEST
54:29
Uh, how I Reach to that point, uh, so he asked me to look for agencies, and I, and I started to do the pitching, and proposals, and strategies, and I got a vision.
Brandy RandGUEST
2:07
So how are we making teams more productive? How do we simplify operations? And of course, a- as we know, everyone's still dealing with really high operating costs that are eroding margin.
Brandy RandGUEST
2:17
So where are the opportunities to drive incremental revenue and profitability? Additionally, the consumer is the center of every conversation, so what do guests actually value, and where should hotels invest? Interestingly, we've seen F&B, of course, as an emerging differentiator to increase revenue, but also enhance that customer experience.
Brandy RandGUEST
2:35
And of course, while hotel development's constrained, owners are investing in renovations and finding really smart ways to reposition properties to create new experiences for guests.
Brandy RandGUEST
2:44
So when we think about all of that, the Hospitality Show is really designed around those real-world operational conversations.
Brandy RandGUEST
2:51
So our current agenda covers everything from revenue growth, F&B profitability, AI implementation, workforce development, and even some new consumer insights.
Cassidy QuintanaHOST
3:00
That's kind of one of my favorite things about the Hospitality Show because, you know, we do have a lot of niche events in hospitality, but this is the one event where you can kind of learn about all aspects.
Cassidy QuintanaHOST
3:09
Even, you know, you learn something that you didn't think you were going to, and you can learn about new things that you have interest in, and it's kind of a cool event that way.
Anurag BhatnagarGUEST
16:27
They understand food and beverage.
Anurag BhatnagarGUEST
16:29
F&B has become such a big part of our business today.
Anurag BhatnagarGUEST
16:32
Nearly 40% of our business is food and beverage.
Anurag BhatnagarGUEST
16:35
And creativity, innovation, F&B programming is very, very important for us, and very, very important for our guests.
Anurag BhatnagarGUEST
16:43
Wellness.
Anurag BhatnagarGUEST
16:44
Now, wellness going beyond just, uh, traditional Indian wellness, but weaving in integrated wellness with longevity, with future-forward wellness programs that we can deliver across our hotels.

8 MINS LATER

Anurag BhatnagarGUEST
24:46
And of course, we see...
Anurag BhatnagarGUEST
24:48
So overall it's kind of impacting our average age, uh, and brought it down.
Arnaud ZannierGUEST
27:20
It's, it's such a big project.
Arnaud ZannierGUEST
27:22
So you've got all the F&B scene that is very important.
Arnaud ZannierGUEST
27:24
We got four restaurant.
Arnaud ZannierGUEST
27:25
We have three bars.
Arnaud ZannierGUEST
27:27
We've got a rooftop bar.
Arnaud ZannierGUEST
27:28
You've got the Paul Ricard Bar.
Arnaud ZannierGUEST
27:29
You've got, you know, there's so many places where you can enjoy those moments around F&B.
Arnaud ZannierGUEST
27:35
But one element where we will be pushing for even more attention is the wellness.
Andrea StokesGUEST
19:32
And that's maybe not necessarily the economy segment, which doesn't tend to have food and beverage, but all of the other segments.
Andrea StokesGUEST
19:40
And that really speaks to the importance of of food and beverage of you know breakfast in the limited service categories and segments right of that complimentary breakfast quality of food but also the dining the service in the dining area and or restaurant that is very important so getting back to the staff service side we do measure that service in the dining area you know, timeliness of your order, you know, is sort of the efficiency of that F&B operation.
Andrea StokesGUEST
20:16
Right.
Andrea StokesGUEST
20:17
We have benchmarks for that.
Josiah McKenzieHOST
21:33
That's fascinating.
Josiah McKenzieHOST
21:34
I'd love to touch on a couple areas briefly before we go.
Josiah McKenzieHOST
21:36
I think, you know, we were speaking before about the kind of the power of doing these surveys over time and just kind of the institution that J.D. Power has created around, you know, what is the consumer saying? What's going on in these businesses today? And we spoke so that on property F&B spend is interesting.
Josiah McKenzieHOST
21:54
We touched on a number of elements of this, but is there anything else either in the research or just things that you're observing and might dig into in the future around the changing consumer? We talked about generational changes, but just broadly speaking, any consumer changes, any other consumer changes that owners operators should be aware of?
Britney MuellerGUEST
4:41
So Club Grub's really a hospitality operating system for private clubs, golf courses, resorts, and communities.
Britney MuellerGUEST
4:48
And what we're doing is we're combining the mobile F&B ordering with GPS-powered delivery, the kitchen management, staff communication, and member engagement all into one seamless experience.
Britney MuellerGUEST
4:58
So what we're doing is we're giving clubs the ability to allow hospitality to happen really anywhere on property.
Ricky PottsHOST
5:05
Okay, so you said QR code there.

18 MINS LATER

Britney MuellerGUEST
23:14
So we're simply passing that fee directly through to the club.
Britney MuellerGUEST
23:17
So it's really just kind of dependent on the property, exactly what they're needing and what their preferences are.
Ricky PottsHOST
23:24
You cite that clubs are seeing a 20, 30% lift in F&B revenue.
Ricky PottsHOST
23:27
I mean, bring it on, but in a private club, unfortunately, the more I sell, the more I subsidize, but that's a totally different conversation.
David VogelGUEST
8:09
They were at Walmart, Target, and Amazon, and you name it, and nothing wrong with that.
David VogelGUEST
8:13
But For us, I thought that if we could position something really more on the high end side and stay true to that channel, that bartenders, bar managers, F&B directors would appreciate it and feel the cachet of something more specialized.
Scott RosenbaumHOST
8:29
So we set
David VogelGUEST
8:29
off on this design execution, right? You know, what could Badger be? Could Badger be this brand that is fun and engaging with a social personality that but also have that kind of luxurious feel.

6 MINS LATER

Erika DuceyHOST
14:29
And walk me through the other flavors that you've developed and released since then.
David VogelGUEST
14:34
Sure.
David VogelGUEST
14:34
So after it was interesting, we have a lot of conversations early on with these F&B directors or hotel GMs or bar managers, and they love the three products you mentioned.
David VogelGUEST
14:47
But they're like, hey, we're not going to go half.
