And then I think you just threw out a bunch of ideas for lager using local ingredients.

Yeah, I think Fonio came up, which is that alternative grain from Africa that doesn't require irrigation.

But that's what obviously wouldn't be a local ingredient, but it has a neat story to it.

And then, yeah,

Let's get away from like tech and the lab and look at what was happening on earth.

And you are looking at this ancient grain called Fonio.

And I would love for you to talk about why you have honed in on Fonio as the grain that you are really, you know, propping up, you know, Fonio as a platform.

Yeah, and fonio is just one of many other underutilized crops that are out there around the world.

I zoned in on that because that was a grain that was checking all the boxes, you know, for a kitchen standpoint, it cooks in five minutes, you know, that's one thing.

We have done great initiative.

We call it Brewing for Impact.

So we're working with breweries and turning Fonio into a beautiful, delicious beer.

And so I thought it could be like a way for me to give back if I could figure out a way to find markets for these grains so that these farmers have economic opportunity so you know in California I had the distance to like really be able to think about this supply chain and creating this market and eventually I launched what I called again Yolele like my first restaurant and that's my CPG it's a food brand and we have our products being distributed across the US in supermarkets like Whole Foods and we've and took it to the next level by bringing the ingredients to other industries.

But now you have breweries around the world that are making beer with Fonio.

And in doing so, they also have an impact on the communities that grow them.

The name of the company is Isolele and Fonio.

Please tell me about, I must admit, I have not tried Fonio, but tell me what kind, it's not actually a grain, but it's something similar.

What kind of a... a plant and ingredient, is it?

Actually, it is a grain.

and now all over the united states which was uh uh quite amazing i mean obviously i'm making it seem fast and easy but it was it was much much more challenging than that and uh and so but that became a mission you know and i felt like it was a natural journey for a chef from my part of the world to like not only introducing the food culture, but at the same time, I had to also make it a mission to introduce the ingredients and the people behind these ingredients, and at the same time, bring opportunities for the region and for the environment as well, because it's a grain that's grown in a regenerative way.

Any season, they are growing.

Like, Fonio, they used to call it a poor man's food because it was so easy to grow.

You walk around, you find it.

And I feel like if we are going to fight food security...
