There's not a lot of recent popular Disney IP that lends itself to this type of ride layout.

Finding Nemo works very well here, but Finding Nemo seems to have run its course.

But I will throw out there's some other options here.

For example, the underwater sections of Moana, with Tamatoa and the Land of the Monsters, and maybe even some underwater version of Te Ka or Te Fiti might be worked into the ride.
