Famine food

We wanted to actually encourage people to think also about what happens in the kitchen.

What is going on with foods that are considered poverty foods, how cooks deal with them, how cultures view them.

And for that reason, we wanted to put the emphasis on poverty as the adjective to describe food, rather than poverty as the noun that is then described by food.

They've forgotten that.

As they've forgotten it, this bread becomes celebrated.

And there are other, I think, ways that things that were once poverty foods become, become famous, become trendy.
