Entremetier

Because I know that what I'm doing is I'm preparing him for that next evolution, that step onto the line where those curveballs will come constantly.

And, you know, he'll first step into a station we called Entremetier, which is basically a cook that does all the side sets for the main dish.

So he's going to step into that role first and he'll learn to speed his pace and he'll learn to really keep up with everything that's going.

And through osmosis, because he's standing next to the guy or girl who's cooking the fish or cooking the meat, through osmosis, he's going to pick up moves.
