So because we were complete amateurs, apart from Ian, our head chef.

Anyway, the whole thing, we started as a little hotel in the South Downs, on the South Downs Way, in a little village of Jebbington, which is the first Downland village coming out of Eastbourne.

So it feels very hidden away, but actually it's, in a funny way, quite near to a vanity.

So we decided to be a little hotel with six bedrooms as well as the restaurant, because we didn't really know what was going to go best.
